Note: You don't have to join a covenant to unlock its corresponding trophy. You get it as soon as you select the 'join covenant' option.
It doesn't matter if you answer 'Yes' or 'No' after that so you don't have to abandon your former covenant just to get the trophy. But you WILL need to join some covenants to get all miracles/pyromancies/sorceries.

Note: It appears that is not necessary to get all the miracles with the same character in order to get the "Prayer of a Maiden" trophy (not confirmed but it should apply to pyromancies and sorceries as well).Also not confirmed for the weapons trophy. Update: I can shoot that possility for the pyromancy trophy, as I had all pyromancies minus flash sweat and bought that pyromancy on a separate character. My assumption as to why it works that way for miracles is the fact that you need to join 3 different covenants to get all miracles that way, and you have to kill one of those covenant leaders to get some miracles as well. Update: All sorceries must be obtained by same character for "Wisdom of a Sage" trophy. I had all but Fall Control, save/quit, loaded up another character and bought the spell… nothing. Loaded up the first profile again and purchased the spell: trophy. (1.05) False. I just got white dragon breath on my mage while missing strong magic weapon, remedy, and resist curse, and I got the sorcery trophy. I have those three missing sorceries on other characters. (1.05)

I had almost no spells on my character I was playing and stumbled upon hush and got the "Wisdom of a Sage" trophy not more than 30 minutes ago, for my other character had the rest. I don't think it was a glitch.

Glitch: The "Reach Anor Londo" trophy/achievement has a potential glitch where it doesn't appear. Possible solution: After fighting the Iron Golem, immediately activate the golden circle. When I encountered this problem, I returned to the blacksmith for upgrades. It wasn't until my third character (during a speed run) when I proceeded immediately to Anor Londo, after defating the Iron Golem, that the Trophy finally appeared. For the record, this was encountered on PS3, though I've seen a couple other reports, only one mentioned XBOX and it seems to be rather rare on either console.
